Date: Sun, 12 Sep 93 15:32:42 MDT From: Sara Katsh My mother's modification of a traditional recipe: DATE BREAD 3/4 c boiling water 1 c sugar 2 T applesauce 2 c flour 1 c nonfat yogurt 1 pkg (8 oz) chopped dates 2 egg whites 2 t vanilla 2 t baking soda 1/4 t baking powder Pour boiling water over dates. Let stand 15 min. Beat sugar, egg whites, applesauce for 3 min on high speed. Blend in date mixture and vanilla. Comine dry ingredients. Add alternately with yogurt to beaten mixture. Blend well. Pour batter in 4 sprayed small aluminum loaf pans (3 1/4" x 5 3/4"). Bake at 350 degrees for 35-40 min. Makes 4 loaves.
