Date: Thu, 09 Sep 93 17:27:42 EDT From: anich@cordmc.dnet.etn.com (Steve Anich, Eaton Corporation, Milwaukee) LEMONY BEAN BREAD This recipe comes from the book "Lean and Luscious and Meatless" It has been altered somewhat to get rid of the excess fat. 3/4 cup all-purpose flour 3/4 cup whole wheat flour 2 teaspoons baking powder 1/2 teaspoon ground cinammon 3 egg whites (or equivalent egg substitute) 1/4 cup firmly packed brown sugar 1 cup cooked kidney beans, drained (6 ounces) 1/2 cup orange juice 2 tablespoons plus 2 teaspoons unsweetened applesauce 1 teaspoon vanilla extract 1 teaspoon lemon extract 1 teaspoon grated fresh lemon peel Preheat oven to 350. Lightly oil a 4 x 8 loaf pan or spray with nonstick cooking spray In a large bowl combine both types of flour, baking powder, and cinnamon. Mix well. In a blender container, combine remaining ingredients. Blend until mixture is smooth and beans are pureed. Add to dry mixture. Mix until all ingredients are moistened. Place mixture in prepared pan. Bake 35-40 minutes, until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack for 5 minutes, then turn out onto rack to finish cooling.
