I left out the 2T butter or margarine she calls for and substituted cooking spray, and it worked fine. Only took about 5 minutes to prepare. Blueberry Cobbler 2/3 cup flour 1/2 cup sugar (I might cut this down next time) 1 1/2 tsp baking powder 1/4 tsp salt 2/3 cup skim milk (I used Rice Dream Lite because I'm lactose intolerant) 2 cups blueberries cooking spray Combine dry ingredients in a bowl. Add milk and whisk until smooth. Lightly spray a casserole dish with cooking spray. Pour in batter and sprinkle blueberries on top. Bake in a preheated 350 degree oven for 40 minutes or until lightly browned. Serve and eat.
