Date: Thu, 13 May 93 16:28:22 +0700 From: Malc CURRIED LENTILS & PINEAPPLE I love fruit with pulses, so really enjoy this. It's nice garnished with sliced tomatoes. INGREDIENTS 1 large onion, finely chopped 1.5 pints of water 1 clove of garlic 4 tsps curry powder 12 ozs split red lentils 14 ozs of pineapple pieces (drained) serves 4 METHOD Saute the onion and garlic in a little veg. stock or water. After 10 mins or so add the curry powder and lentils. Stir for a minute or so to ensure that the currypowder is well mixed in. Drain and thoroughly mash (yes - mash!), the pineapple pieces and add them to the pan , along with the water (less the ammount you used to saute!) and bring the lot to the boil. cover the pan with a lid and simmer gently on a low heat for 20-30 minutes - ensure lentils are soft and cooked ! Pile onto a warm dish and garnish with tomato slices. Delicious with brown rice and lime pickle !
