Date: Fri, 06 Aug 93 19:39:03 MDT From: Mike D. Kail Here is a "quick n' dirty" concoction I whipped up this PM after a 12M run. Definitely hit the spot! :-) SPANISH-STYLE VEGGIES 1 small eggplant, cubed 2 medium green peppers, chopped 1 medium zucchini, cubed 1 medium onion, chopped (I used a Vidalia) 1 cup tomato puree 1/4 cup water 2 cloves crushed garlic (I used a LOT more :-) ) 1 tsp. cumin 1 tsp. coriander 1/2 tsp. chili powder (more if ya' like it HOT!) 1/4 tsp. cayenne (ditto) Saute garlic and onion in a bit of water. Add eggplant, herbs, tomato puree, and rest of the water. Cover and simmer for about 15 minutes. Add peppers and zucchini. Simmer until all veggies are soft. I had this over a BIG bed of brown rice. Simple, yet effective.
