Kail Spicy Mexican Lentils ********************* 1.5 cups lentils 1 large onion, chopped 5 cloves (or more :-) ) garlic, crushed .5 cup chopped fresh cilantro .5 of a fresh green chile, seeded and minced 1.5 tsp. ground cumin 1 tsp. ground coriander 1 7 oz. can green chile salsa 2 cups canned (no-salt) tomato sauce 2 cups water Place all ingredients in a pot. Bring to a boil, then reduce heat to moderate, cover, and cook until the lentils are tender (~35 min.) Stir frequently. I had this over brown rice...DELICIOUS and easy!
