Date: Mon, 18 Oct 93 06:59:00 PDT From: sally charette This is derived from an Ornish recipe for butternut squash that I found in _Reversing Heart Disease_. The recipe only called for squash, but I added the yams and apples on a hunch. Well, *I* liked it! :) SQUASH YAM BAKE 2 cups cubed butternut squash (1-inch cubes) 1 cubed yam (about 1 to 1 1/2 cups?) 1 cubed Granny Smith apple 1/4 cup brown sugar (more or less to taste...less, to mine!) 1/2 cup water Toss all the cubes together into a 2-quart coverable baking dish. Pour the water in. Sprinkle about half the brown sugar over the top. Bake for 40 minutes in a 375 degree oven (preheated, of course). Remove from oven, sprinkle with remaining brown sugar (I didn't use all of it), and serve. I actually allowed it to sit for about 10-15 minutes after taking it from the oven because I had other things going that weren't ready yet. It had a very nice flavor and made a beautiful meal with someone's recipe for Mexican pan bread, roast garlic and crusty bread, and an array of roasted red, orange and yellow bell peppers. Very fall festive!
