Date: Wed, 20 Oct 93 08:49:31 +0600 From: Paula.Hostetler@central.sun.com (Paula Hostetler) White Frittata from "Great Good Food" by Julee Rosso vegetable spray (ie Pam) 6 large egg whites salt to taste ground black pepper 4 scant cups lightly steamed mixed vegetables such as: chopped broccoli, thinly sliced carrots, chopped string beans, thinly sliced onions, roasted peppers, peeled, seeded, and julienned. I use *whatever* I have available. 1 teaspoon fresh garlic, minced finely 1 tablespoon finely minced sun-dried tomatoes (reconstitute in hot water before chopping) 2 tablespoons minced chives 1. Preheat the oven to 350. Lightly spray an 11-inch glass pie pan with the vegetable spray. 2. In a large bowl, whish by hand the egg whites, salt and pepper until foamy, approximately 1 minute. Add the vegetables, garlic, and sun-dried tomatoes and mix until well combined. Pour into the pie pan and bake until the egg whites are set, about 14 10 16 minutes. Remove from the oven; loosen edges with a spatula. Sprinkle with chives, cut into wedges, and serve. cal 79 carb 10g protein 10g chol 0mg fat 1g/12% (but in the original recipe they call for 1/2 teaspoon of olive oil, I presume that it accounts for the fat)
